Kale can be your best friend if you let it. People can automatically be scared, or put off by its big, curly, green leafs and with its tough stocks. We know we were at first. But once you unleash its beauty and pair it with the right ingredients and dressing, you will never go back.
Once you go kale, you'll never be frail... or fail!
Kale is considered to be a weed, but look at it as a weed that is rich in calcium, iron, magnesium, vitamins A, C and K! It's so full of awesome nutrients, you just need to give it a little massage to break down it's tough cellulose wall in order to receive its gifts.
Roz's massaged kale salad will blow your mind! It's very fast and easy to make, even on lazy day Wednesdays, or to have for lunches throughout the week.

You will need:
1 bunch of Kale (approx. 7 stems - but you can use less if your leaves are ginormous!) 1 tsp Olive Oil 2 tbsp Tahini 1 tsp Tamari
2 tbsp Apple Cider Vinegar Wash your kale leaves and make sure your hands are sparkly clean too! Massage the kale for about 3 minutes, until the leaves feel tender and soft to the touch (they will get very soft and bendy). Add the rest of ingredients to the kale. Massage all ingredients into the leaves for another couple of minutes. Taste to make sure it is to your liking (depending on how much kale you have used, you may desire to add a little more apple cider vinegar or tamari, etc.). Top the salad with whatever toppings you like, and BAM - this salad is pure love!
