Easy Breezy Lemon Squeezy Vegan Lunch - 30 Minute Pasta Lunch!

Packing a lunch can be a burden. We don't blame you. At the end of a work day, you really don't want to make a dinner and a lunch for the next day. But! What if we have a fast and easy lunch idea that you can make ahead of time or the morning of?
Roz shares her Easy Breezy Lemon Squeezy Vegan Lunch idea that answers your prayers. It is a veggie packed pasta salad that is full of flavour and keeps you feeling full during those busy work days.
The great thing about this lunch is, you can change up the veggies if you like certain veggies more than others. It's fresh and will make you smile. Your coworkers will be jealous and wanting to have your lunch, that's how tasty this pasta salad is!

You will need:
1 pint of cherry tomatoes, halved 11 oz of spinach 1 zucchini, sliced 5 pieces of sundried tomato, sliced 1 red onion, medium chopped 8 leaves of basil chopped 1 pint of mushrooms, sliced half a lemon season to taste (we used a mix of dehydrated garlic, sea salt and other spices) 8 servings of fussili pasta and 1 tablespoon of olive oil!
Saute onions and mushrooms with a bit of salt seasoning for 5 minutes.
Add zucchini and cover till soft.
Once pasta is cooked, add it to the cooked veggies and add the cherry tomatoes and spinach.
When the spinach is wilted, add sun dried tomatoes, olive oil, basil, season to taste and drizzle with lemon.
Eat with Siracha!! The heat really brightens up the flavour.
