Nutrient Packed Oatmeal Raisin Cookies!

Oatmeal cookies scream summer!! And summer time is full of bbq's, hikes, camping trips and long weekends. In the summer, you don't want to be baking elaborate desserts for those fun moments.

These cookies are durable and pack so well for your day trips. You can even freeze them if you don't want to be tempted to eat all of them, as they call, "Eat me!".

This is not your typical oatmeal cookie. It has plump raisins, crunchy walnuts, nutrient packed chia seeds and immune boosting cinnamon. The richness of the coconut oil and coconut sugar makes these cookies so tasty and irresistible.

Don't be surprised that these cookies will be flying off the platter or fought over at the camp fire!

You will need:

2 Cups of Oats 2 Cups of All-Purpose Flour 1/2 tsp Baking Soda 1/2 tsp Baking Powder 1 tbsp Cinnamon 1 tsp Salt 2 tbsp Chia Seeds

1 3/4 Coconut Sugar 1/2 cup Banana, mashed 1 cup of Coconut Oil, room temp 1 tsp Vanilla

1/2 cup Raisins (soaked before hand for 1 hour) 1/2 cup Walnuts, roughly chopped

With a mixer; cream on medium high, the coconut oil and coconut sugar for 8 min, till smooth and creamy.

Mix all dry ingredients, including nuts and set aside till needed.

Pour in banana and vanilla into creamed mixture and mix 2 minutes till combined.

Add all dry ingredients and blend till slightly mixed.

Drain raisins and add to batter, mix on low speed till fully combined.

Place a tbsp. size of batter and bake at 350 degree F oven for 12- 15 minutes.
